Festive season is around the corner and it’s time to celebrate with traditional recipes by Ganga Singh, Chef at Rasotsav.

Moong Dal Halwa

Ingredients:
100 gms Yellow Moong dal
100 gms Ghee (Cow Ghee Puree)
100 gms Sugar
5 gms Elaichi powder
½ litre hot water
For garnish: dry fruit nut silvers – Badam, Pista, Kismis, Kaju (2-3 each)

How to make Moong Dal Halwa?
1. Soak moong dal for two hours.
2. Grind soaked moong dal in a mixer.
3. Heat ghee in a pan on slow flame and add ground moong dal, keep turning till golden brown color, it will give distinct aroma when roasted well.
4. In a pan, add sugar in boiling water make sugar syrup.
5. Pour moong dal mixture in sugar syrup and cook on low flame till the mixture blends well.
6. Moong dal halwa is ready, garnish with dry fruit nut silvers.


Kesar Lassi

Ingredients
1 gms Saffron
2 -3 Chopped Pista
2-3 Chopped Badam
3-4 Chopped Kaju
1 & ½ cups fresh Curd (Dahi ), made from full-fat milk
5 gms Cardamom powder
8 tsp Sugar Powder
4 to 5 ice Cubes

Method:

  1. Blend in a mixer, curd, sugar powder & cardamom powder for 2-3 Minutes with ice cubes
    in blender.
  2. Add the saffron strands and mix well.
  3. Garnish with chopped Pista, badam& kaju.
